We have just published a step forward in the development of sensors for the detection of gluten in food with high sensitivity and reliability.
We have designed a competitive electrochemical aptasensor on disposable carbon electrodes to make easier the detection of minute amounts of gluten in food. The detectability is even slightly better than our previous competitive magnetoassay.
